Welcome to the first of our Christmas specials. Now, I like a Christmas roast as much as anyone, but for me the best bits are those glorious time-honoured additions to our yuletide plate in the form of roast potatoes, Cumberland sauce, sprouts and, oh heavens, the piping hot giblet gravy. The perfect recipes for these, and a classic roast turkey, come to us via the wonderful Jeremy Lee, who also throws in a handsome spiced fruit pudding and a dazzling clementine sorbet.

Anna Joness A Modern Way to Eat is one of our favourite cookbooks of the year, and we have some fabulous vegetarian recipes from it. Anna is taking us all the way through the festivities, from parsnip rosti for Christmas Eve and a vegetable kedgeree for Christmas morning to goodwill pie with sticky cider gravy for Christmas lunch. Add that to her Boxing Day feast of chestnut and greens seeded galette and your meatless Christmas is sewn up.
